Pleasure has many names

Restaurant 1908 at Parkhotel Holzner in Oberbozen

Pleasure has many names, and one of them is Restaurant 1908. This gourmet restaurant boasts numerous awards, and its walls could tell stories dating back to the Austro-Hungarian monarchy. The Parkhotel Holzner not only features an excellent hotel kitchen and a lunch bistro, but for the past seven years, it has also offered its own evening fine dining venue: Restaurant 1908.
“As the artists and pioneers of Art Nouveau in 1908—the year our hotel opened—stood for a new way of life, we believe in the good and strive for the best,” reads the restaurant’s website.

We spoke with hotelier Wolfgang Holzner, who emphasized that the many awards the restaurant has received are thanks to Stephan Zippl, the young head chef from Ritten.
“He’s innovative, curious, and bold—and we are truly happy to have him with us,” explains Holzner.

Restaurant 1908 is especially praised for its use of local ingredients, skillfully combined with products from other regions—never ordinary, always marked by a refined and curious creativity.

Chef Stephan Zippl grew up in Lengstein on the Ritten. He knows the forests, meadows, fields, and farms around the Holzner like the back of his hand, and he brings the best local products to his kitchen and onto the plate. After years of training and working in prestigious establishments, Stephan joined Holzner in 2015 as Sous-Chef, playing a key role in achieving the restaurant’s current culinary excellence. In autumn 2016, he took over as Executive Chef, bringing a fresh breeze to the Holzner culinary scene.

Wolfgang Holzner emphasizes that at Restaurant 1908, sustainability goes beyond regional and seasonal cooking:
“We focus on supporting small local cycles, on fair and reliable partnerships with our suppliers, and on the mindful use of resources. Wherever possible, we source our products from nearby producers.”

And what do the guests love about Restaurant 1908?
“At 1908, you can expect the unexpected. No matter how often you dine here, Stephan always manages to surprise us—whether it’s with the outstanding quality of his dishes or with unconventional ways of preparing ingredients we thought we knew,” says one loyal guest.
